Good piece about head, I'd possibly add the tip to ensure your glass is well rinsed before you pour your beer as rinse aids in dishwasher tablets can kill a beers head in a moment.
Un-malted grain is a great way to add proteins and build head in an ale however you don't want too many otherwise you'll end up with hazy beer, which isn't always desirable.
If you're brewing a porter or stout then the haze isn't an issue and I've found adding a half kilo (~1lb) of rolled oats to a 23 litre (~5Uk Gal) builds a head you have to chew through to get to your ale.
