Thanks for saving my last 30 bottle kit. The information was useful and informative, I made another 30 bottle batch last week then let it ferment with the extra yeast (from the batch I had not added it to after adding the stabiliser by mistake) It was Sodium Metabisulphate and Potassium Sorbate. The two 30 bottle kits are going like crazy!

I scanned the net for ages before finding this information so thanks again.

i have been doing the wine kits now for 15 years or so ,approx. 3-4 every year.after 2 or 3 years of making wine ,i got to know a few people that made their own straight from the grape.they told me they never used any chemicals whatsoever. so i stopped using the sorbate and would just let my brew sit for another month before bottling. I,ve never had a problem .the secret to keeping wine for long periods is keeping it in the dark .

The issue is that Potassium Sorbate only stops the yeast from reproducing. Whatever live cells you add to your wine are still going to ferment. They just won't be able to make a second generation of sugar munchers. James hit it on the head.

It's because potassium sorbate reacts with alcohol to produce sorbic acid, that is the compound that prevents yeast multiplying. See Wikipedia.
Also, a pan is a sideways motion of a camera, I think you were thinking of a zoom in or out, or perhaps a crane shot (up or down).
